Stir Fried Chayote and Beef

Serves 2


Ingredients
• 1 piece of chayote (sliced)
• 235 g (8 ounces) lean beef (sliced)
• 1 cup carrots (sliced)
• 2 gloves garlic (minced)
• 1/2 teaspoon cooking wine
• 1/2 teaspoon black pepper
• 1/2 teaspoon corn starch
• 1/2 teaspoon low sodium soy sauce
• 1 tablespoon olive oil
• 2 tablespoons water
• 1/2 teaspoon sugar
• 1/2 teaspoon oyster sauce
• 1/2 cup scallions (diced)


Preparation
1. Combine beef, black pepper, corn starch, and soy sauce in a bowl. Mix well.
2. In a large skillet, heat 1/2 tablespoon olive oil over medium-high heat, and cook the beef on each side for 1 minute before transferring onto a plate.
3. Use the same skillet, add 1/2 tablespoon olive oil and garlic. Stir until lightly toasted.
4. Add the chayote, carrots, and water, and cook for an additional 2 minutes.
5. Add oyster sauce and sugar. Mix well.
6. Add beef and scallions, and cook for another 30 seconds before serving.
